NUTRITION

  • Lacto Fermentation is an ancient process of enhancement and preservation.  

  • Cultures that live on the surface of vegetables turn the sugars in the vegetables into lactic acid. 

  • Lacto fermented vegetables contain lactobacilli, a probiotic which aids digestion. 

  • The integrity and nutritional value of the vegetables are held intact whereas pasteurization compromises and even negates nutritional value.  

Spirit Creek Farm lacto fermented vegetables are produced in small batches so each batch is unique.  Lacto 
fermented products will continue to ferment and change as they age, try to keep contents covered in liquid to keep top veggies from drying out by pushing down with a utensil or storing your jars upside down.

There is no added sugar to any of our products, just what is natural in the veggies and through the process of fermentation the natural -sugars in the vegetables are converted to lactic acid.

Serving size and sodium: 
We suggest a serving size of 1 ounce (a loosely packed 1/3 of a cup)
1 ounce has approximately 262 mg of sodium
16 oz jar of any of our product has approximately 4,185 mg of sodium


We don't have a breakdown information for calories at this time.  You could estimate it close to what the calories would be for that size of serving for whatever vegetable is most readily present in the product you are eating. 
For example:  
1 ounce of raw beets = 12 calories 
1 ounce of sauerkraut = 19 calories.
