How long is a jar of fermented vegetables good for after opening?
The jar is good for a long time after opening (2 years or more). The jars are not vacuum sealed or heat processed. The lids are just screwed on. So opening the jar does not have much affect on the lasting of the veggies.
The main thing that spoils fermented food is when it is exposed to oxygen. The way fermented foods prevent exposure to oxygen is that they are submersed in a brine. That is why one should keep the veggies pushed down under the liquid in the jar. If there is not enough liquid or brine in the jar then you can make some. The way to make a brine is to add 1 teaspoon of salt to one cup water. Make sure salt dissolves in water. Add enough of this brine to cover the vegetables.
As always trust your nose. Fermented foods are quite safe. It should be good for a long time.

Are your products Certified Organic?
No. However, all the ingredients we use are certified organic. All the vegetables come from our community of certified organic farms in Wrenshall, MN (see "Our Farmers" tab). All the herbs and spices come from Frontier Co-op and are certified organic. The ginger is sourced through Co-op Partners Warehouse and is also certified organic. In the future, we plan to go through the process of certifying the products themselves as well.
